When my mom was in town, we stopped by Williams-Sonoma. They had these wonderful little pie molds there.

Recently hubby was bugging me for chicken pot pie again so I took the opportunity to test out my new pie mold using my tried and true chicken pot pie recipe.
As you can see above, I tested out a couple of ways of doing the crust. I didn’t make my own crust; I used some pillsbury pie crust.
The lattice one is by far the prettiest and also the tastiest. These mini pies tend to have a much higher ration of crust to filling. The lattice one somewhat maintains that. I only made one lattice because I was worried the insides would just spill out but they surprisingly don’t. Next time I will make all lattice.
In general they came out pretty well. It’s important to let the filling cool quite a bit before putting it in the crust or the crust will just totally melt on you (see the pie at the bottom of the photo above).
They also froze really well. We reheated some today and they were just as tasty. And actually there was enough pie filling left over after making these six for an entire pie.
I will definitely make these again.
